Potato Leek Soup/Food for 4 under $14

Happy February!


It's still chilly out there, so we are still making Soup in the creAte kitchen! This month's Food for 4 under $14 is Potato Leek Soup. So Tasty!

Ingredients

-8 Red Skinned Potatoes (Medium)

-3 Leeks

-32 oz Chicken Stock/Broth

-2 Cloves Garlic/or 2 tsp Garlic Powder

-1 Lbs Turkey Bacon


Directions

1. Wash Potatoes and Leeks.

2. Slice Leeks into Ring Shapes


3. Add Olive Oil to Pot, Heat for 1-2 min, add Leeks, Cook for 5-8 minutes until Soft, little bit Brown.


4. If you can, start Peeling and Cutting Potatos into Medium Sized Cubes.


5. Once Leeks are done Sautéing, add Potatoes. Stir.


6. Add Stock or Broth, Covering Veggies


.7. Turn up Heat to Boil, once mixture starts boiling, turn down to Simmer. Simmer for 15-20 minutes, uncovered, until Potatoes are Soft (You can easily pierce a fork through).


8. While Soup is Cooking, start Bacon, cook according to Package directions.


9. After Potatoes are done, Remove Half of the chunky mixture, not so much Broth. Puree the mixture in the pot, then add the rest of veggies back. Use Smasher to Smash.


10. When Bacon is done, Chop up, add to Soup.


11. Salt, Pepper to Taste and Enjoy!


*Be sure to Cool Down to Room Temp before Refrigration or Freezing
